The Drop and Two Drops are excited to announce a collaboration with celebrated cook and author Sophie Wyburd, who has created a ricotta, mozzarella, lemon zest and pistachio pesto toastie.

Sophie Wyburd is a cook, recipe writer and presenter from South London, with a specialism in simple, hearty comfort food. Formerly heading up the food team at Mob, you can now find her recipes in her debut cookbook Tucking In: A Very Comforting Cookbook, and in her bestselling newsletter, Feeder. Sophie’s recipes have been featured in The Times, Olive Magazine and Sainsbury’s Magazine, and she has appeared on Saturday Kitchen as well as Jamie Oliver’s Channel 4 show, whilst also hosting popular supper clubs in London.

Sophie’s Toastie is the third toastie in The Drop and Two Drop’s Guest Toastie series, following Seema Pankhania in November 2024, and Ruben Dawnay Rose of Ruben’s Reubens in February 2025. Sophie says of her toastie:

“This toastie is inspired by the fresh flavours of spring. I love the combination of bright, lemony pistachio pesto with sweet and creamy ricotta, and it may sound like an unconventional toastie filling, but I promise you it works. Toasties are unbeatable for a speedy, comforting meal, and I really think we should be putting more condiments and sauces like pesto into them for flavour. The pesto here brings a freshness often lost in cheese toasties, but without sacrificing on indulgence, which you very much get from the oozy cheese.” 

Available at The Drop, Coal Drops Yard, and Two Drops, Battersea Power Station until the 31st of May.
